Would anybody else's hubby eat this?


Cuz I know mine won't. Not even out of politeness, which he does with most my cooking ventures. But to me this looks so fresh and healthy and gorgeous. Can a salad be gorgeous? I found this on The Pioneer Woman Cooks site, go take a look around! If I make this I know I will have to eat it all, which unlike a plate of cookies, will be good for me! Does anyone want to come over and have lunch with me??

Happiness


I've been trying to do more scrapbooking. It's a futile long term project I'm sure, but here is my latest attempt!






Spring Break!

Jackson's preschool had a rodeo round-up the day before spring break started. It was so much fun. Jackson was really excited to wear all his cowboy gear. He insisted I call him Cowboy Jackson and he kept calling me Cowboy Mommy. I'm cool with that.





Friday we went downtown to the Natural History Museum, aka the Dinosaur Bone Place.
And by the way, yes that "isssss a longhorn"...





Saturday we went for a family bike ride on the P'ville greenbelt. Coop was chillin in the little trailer, Jackson was miles ahead of all of us.

What's next for spring break? Maybe the zoo, grandparents and picnics if the weather stays nice.

yummy, even for wimps


I got this at HEB this week from the little chef station they have set up in the middle of the store. It's usually wierd, seafood stuff, so I veer away from the area. But this time I happened to get too close and the guy asked if I wanted any chili. That sounds pretty normal to me, sure! It was so good! Jackson ate a whole bowl! Ok, it was a sample sized bowl, but this is impressive anyway. I am a big wimp when it comes to hot or spicy food, and thankfully Jason is too. So Jackson and I made it tonight. Here's what we did:


1. Brown ground beef.

2. Add jar of chili, simmer until hot.

3. Eat
